Ingredients: Sponge Cake, Sugar, C1 Eggs, Flour, Baking Powder, Vanilla Sugar, Warm Water, Filling, Apples, Lemon Juice, Cinnamon

Cooking method:

I preheat the oven to 180°C. First you need to prepare the apples. Ripe, seasonal apples should be peeled and cut into thin slices. Add lemon juice to them and stir.

Spread apples on a baking sheet with parchment paper, in one layer. I sprinkle with cinnamon. For now, I set it aside and prepare the biscuit dough.

I separate the whites from the yolks. Add a pinch of salt to the proteins and beat until a fluffy foam appears. Now add sugar little by little and beat until stiff peaks. At the end I add vanilla sugar.

At minimum speed, I mix in the yolks one at a time.

I mix flour with baking powder. Sift half into a bowl and mix gently with a spatula. I pour water around the edge of the bowl. I sift the remaining flour and mix again. I spread the finished dough on apples, level it.

The biscuit should be baked at 180°C for 20...25 minutes. I bake on the middle level in the oven, mode top + bottom, without convection.

I immediately turn the finished biscuit onto a sheet of parchment, and remove the top paper. With the help of the bottom sheet, I roll it into a roll, immediately, while still hot.

I wrap it in the same parchment and leave it to cool. Before serving, sprinkle with powdered sugar.
