Ingredients: milk (can be replaced with whey) + 300 ml of milk for cream, egg + 1 yolk (for cream), rice flour, corn starch + 20 g cornstarch for cream, salt, sweetener = 10 g sugar + sweetener for cream, olive oil, cocoa
Cooking method:
Mix all the ingredients, except for the oil, with a mixer.
Then add olive oil and mix again.
We preheat the pan and grease it with a drop of oil, pour the dough over the diameter of the pan and fry the pancakes on both sides.
For the cream, mix 300 ml of milk, 20 g of corn starch, 1 yolk and a sweetener to taste, put everything on fire and stirring, bring to a thickening. After that we leave to cool.
After the cream has cooled down, put 1 pancake on a cling film and grease it well with cream. Stepping back a little from the edge, put the next pancake on top and also grease with cream. And so are all pancakes.
Then, with the help of a film, we twist the pancakes into a roll and close tightly. Let it sit in the fridge for a few hours, preferably overnight.
We take out our roll, cut it and serve with your favorite fruits or berries. It turns out very tasty, tender and soft. Bon Appetit!
