My husband was just dismayed when he found out that marshmallows are not baked in the oven and do not need a stove to make them. He did not believe me until he saw the whole process. For me, the preparation of marshmallows is also some kind of magic. In what miraculous way is this airy snow-white miracle obtained from egg white, apples and sugar?
Last year, when we all had a wonderful summer, I wrote a post about making applesauce for marshmallows, as preparations for the winter. Now it's time to make marshmallows directly from this puree at home. In this recipe, I decided to add a slight flavor and aroma of mint.

Classic homemade marshmallow recipe
I will immediately boil the mint leaves with boiling water so that they are well infused and then leave them to cool.
I pour agar-agar with cold mint broth.
Divide sugar into 2 parts:
- 50 g for applesauce
- 250 g for sugar syrup
I beat the applesauce until it becomes light, add the egg white and pour in the rain 50 g sugarwithout stopping beating.
Beat everything together until fluffy stable mass.
Agar-agar, filled with mint infusion, put on the stove, bring to a boil and completely dissolve and pour into it large (250 g) serving of sugar.
I boil the syrup to (110 ° C degrees) or until it begins to drain from the shoulder blade with a thread.
Pour the finished syrup into a puree in a thin stream, without stopping whisking.
Carefully pour in the syrup to the end and beat the mass for a few more minutes, until thickened.
I transfer the finished mass into a pastry bag and place the marshmallows on parchment. On the back of the parchment, I drew circles so that the size was about the same.
I leave marshmallows open at room temperature for 6-20 hours, the time depends on temperature and humidity.
After drying, I carefully remove the marshmallow so as not to deform the ribs and not disturb its beauty.
I roll the glued halves in powdered sugar and that's it.
Apple Marshmallow Recipe:
125 g applesauce
300 g sugar
80 g water or mint decoction
4 g agar-agar
1 egg white
