Ingredients: Any vegetables, I have this: eggplant, bell pepper, carrot (medium size), onion (medium size), garlic, A little fresh grated ginger as desired and to taste, Spices to taste (black pepper, smoked paprika, Italian herbs), Fresh/dried greens to taste, tbsp vegetable oil, For thick sauce:, tbsp corn or potato starch, tbsp soy sauce, water (approximately)

Cooking method:

Use vegetables according to your taste. It is very good to use potatoes, eggplant, zucchini, peppers, cucumber, carrots, onions. You can use frozen vegetables.

It is best to cut all vegetables into long strips, onions into half rings or cubes.

Heat up the oil in a frying pan. Put carrots, onions, garlic. After 3 minutes, potatoes (if using). After 5 minutes, eggplant, peppers (if you use them). Simmer until almost done. Zucchini and cucumbers are placed last and stewed for about 5 minutes. Add water occasionally to keep the vegetables from burning. Simmer until the vegetables are cooked under the lid, stirring occasionally.

Prepare the sauce: Pour starch into a mug (I have corn), pour in 3 tablespoons of soy sauce, mix well. Pour in water (any degree of heat. I use water at room temperature).

When the vegetables are ready, pour in the resulting sauce and stir the vegetables until they thicken. *By the way, if you boil pasta and make this starchy sauce, you can mix them together in a saucepan, and this way you get very tasty "pasta in sauce".

You can serve immediately, or you can eat the dish cold. Delicious with some side dish (more on this in the recipe description) or you can eat it as an independent dish. When serving, you can decorate with fresh herbs.
