A quick and very tasty salad with beans and crackers is a godsend for any housewife. It can be served to guests who came unexpectedly, or cooked for a quick snack.
Ingredients: canned beans, fresh cucumbers, cheese, eggs, salt, pepper, spices, Provencal herbs (you can take any spices), olive oil, garlic, mayonnaise, crackers
Cooking method:
Cooking croutons (you can take store-bought ones, but it will be tastier with homemade ones 😉). We cut the bread into small pieces (whichever you prefer) and put it in a plastic bag, add salt, pepper and your favorite herbs (I have Provence) and olive oil to taste.
Close the bag (together with air) to make it easier for the breadcrumbs to mix. Shake for a few minutes to mix the contents well.
Pour the preparations for croutons onto a baking sheet and put in an oven well preheated to 220 degrees for 10 minutes (to well browned, but not burnt!) The time can be reduced or increased, it all depends on the characteristics of your ovens!
Add chopped garlic to the hot crackers. Mix gently and let them cool down well.
Cucumber, eggs and cheese cut into small squares and put in a salad bowl. Mix well and add mayonnaise.
Add the beans to the rest of the ingredients and mix gently.
Put the salad on a plate for serving, sprinkle with croutons. Serve to the table. Bon Appetit!
