Pozharsky cutlets with fried potatoes

Ingredients: minced chicken, vegetable oil, cream, white bread (loaf), butter, salt, Garnish: potatoes, herbs for serving

Cooking method:

Prepare minced chicken (twist the chicken breast or other parts in a meat grinder). Peel potatoes, rinse. (I'm counting 2 medium potatoes per person, usually not eaten anymore).

Cut off the crusts from 4 slices of a loaf, pour over with cream. Stale bread absorbs moisture better and faster, but there were no problems with fresh bread either. From the remaining bread, also cut off the crusts, cut into small cubes and dry in the oven at 180 ° C for 10 minutes. This time I overcooked the crackers🤭.

In the meantime, pass the softened bread through a meat grinder. Mix with minced meat, salt, add butter, mix the mass and put in the refrigerator. The butter can be grated, or chopped with a knife (it’s convenient for me to use a grater, and then skip the mixed minced meat again in a meat grinder).

We take out the croutons from the oven, let them cool, and in the meantime we will take care of the side dish. Cut the potatoes into strips, put on a baking sheet, pour over with oil, mix. You should not immediately salt, otherwise a beautiful crust will not work. Salt after frying. Send to an already preheated oven to 180 ° C for 15-20 minutes. (depending on the oven). It is better not to use glassware with a thick bottom, as it takes a long time to fry, there is no crust.

Now let's get to the meatballs. Beat the minced meat, form cutlets and breaded in oval-shaped breadcrumbs. I make not very large ones (a little more than a tablespoon).

Fry cutlets until golden brown. Remove the potatoes from the oven and put the cutlets in there. Bake 10 min. at 180°C until air bubbles appear. Sometimes it takes 15 minutes, put in the middle of the oven. If everything is cooked consistently, it turns out to quickly, satisfyingly and tasty feed the family.
