Ingredients: pork meat on the bone, carrots, onions, pearl barley, potatoes, tomatoes, marinated cucumber, cucumber pickle, lemon, salt, pepper, bay leaf, frying oil, water, dill, parsley
Cooking method:
Wash the meat. As soon as the water boils in the pan, put the meat and cook for 1 hour over low heat. Remove the formed scale. Then add the washed pearl barley to the broth and cook for another 30 minutes, salt.
While the meat is cooking with cereals, we will fry. Cut the onion, grate the carrots on a coarse grater and fry in vegetable (butter) oil until soft. Then add pickled cucumbers, finely chopped and fry for 5 minutes, stirring occasionally.
At the end, add finely chopped tomato (I have frozen homemade ones). Add cucumber pickle and simmer until the liquid evaporates, sprinkle with ground black pepper.
Peel the potatoes, cut into small cubes and add to the broth. Cook until potatoes are half done.
Wash the lemon, peel it, cut into slices. We need three circles. Cut into four pieces.
Add the roast, lemon, bay leaf to the pan, and cook for 10 minutes. Ready! Serve, sprinkled with herbs, with crackers and sour cream, as you like.
