First of all, I want to note that when you take the simplest ingredients, it becomes amazing how such beautiful and tasty cakes are made from them. Yeast-free Arabic pita is characterized by the presence of a cavity, like an inner pocket, where you can put any sauce, salad or any other filling. Therefore, this doubles the value of the cake. Moreover, the same pocket securely stores the filling inside, and protects neighboring things from getting any sauce on them (in a briefcase, for example).

Pita - Arabic flatbread with a cavity inside
- I stir a third of a teaspoon of salt with hot water (60-70 ° C degrees).
- I sift the flour, make a hole in it and pour salt water and half a tablespoon of vegetable oil into it.
- I knead a smooth homogeneous dough with my hands (kneading 5-6 minutes) and let it rest about half an hour. So that it does not wind, you can put it in a bag.
- As a result, I divide the dough into 4-5 parts, and roll each part evenly. The number of pieces depends on what size pita you want.
The pan should be well heated.
✔️ I roll out a cake with a thickness of about 2 mm. (Moreover, it is very desirable that the cake be of even thickness and with even edges, then it will open well.)
✔️ I spread the pita on a dry frying pan. I keep the heat between medium and high.
✔️ When bubbles begin to inflate, turn the cake over to the other side.
✔️ I wait for the edges of the pita to rise and turn it over again.
✔️ The cake should inflate like a ball, turn it to the other side. I do this several times (15-20 seconds each) so that the pita is well baked.
✔️ I take off the finished cake and put it on a clean towel. If you want soft pitas, cover them with a towel, if you want slightly crispy ones, do not cover them with anything.
