Ingredients: red lentils, water, carrots, onions, red bell peppers, tomato or 1 tsp - tomato paste, garlic, vegetable oil, butter, dry mint, turmeric, salt and black pepper, bay leaf, lemon for serving wish
Cooking method:
Rinse the lentils well, add water and cook for ~ 20-25 minutes until tender. Red lentils do not require soaking before cooking.
Crush the garlic cloves with a knife and fry them in vegetable oil for 2 minutes, add chopped carrots, onions and bell peppers. Fry everything together for another 5-7 minutes over medium heat. Add peeled and chopped tomato or tomato paste, mint and turmeric. Stir and simmer for three minutes.
Put the frying into a saucepan with lentils and beat with an immersion blender until smooth. Now you can salt and pepper. Add bay leaf and butter. Bring soup to a boil. The soup is ready! 10 minutes to let it brew!
For soup, you can cook bread sticks with sesame seeds and flax seeds. You can use ready-made puff pastry or, like me, regular yeast bread dough.
In a bowl of soup, you can optionally squeeze the juice from a slice of lemon, garnish with herbs. Bon appetit😋🌹.
