Cooking method:
Sift flour into a container, add salt, sugar, yeast, mix. Add warm water and olive oil, knead the dough. The dough should be soft, elastic, not sticky to the hands. Cover the dough with a lid or film and send it to a warm place for 1-1.5 hours. I use the oven turned off, preheated to 40-50 degrees. During fermentation, you can make a punch down dough.
We heat up the oven. I use the "Pizza" mode (bottom heat + hot air) and bake at 200℃. After 1-1.5 hours, we take out the dough, transfer it to a table sprinkled with flour. We make one large or two small pizzas. I will make one big one. The amount of dough worked well for a 36 x 44 cm baking sheet. Sprinkle the baking sheet with flour or semolina.
We roll out the dough, put it on a baking sheet, stretch it a little more, make the sides. Lubricate with sauce (this time I have ordinary ketchup), lay out the filling, sprinkle with grated cheese on a coarse grater. I like suluguni cheese - great for pizza.
We send the pizza to the preheated oven, bake until cooked (the cheese should melt, but not fry). Recently, I began to cook pizzas with pre-baked dough bases. I roll out the base and send it to the oven for 5 minutes, then the sauce, filling and into the oven until cooked.
