I propose to prepare a simple, yet very tasty dish that is suitable both for the festive table and will be a great addition to the usual lunch or dinner. So, a delicious trio is potatoes, eggs and fish preserved in oil.

Potato balls with tuna

Ingredients: boiled potatoes, tuna, eggs, parmesan, breadcrumbs, parsley, deep-frying oil, salt, pepper

Cooking method:

First things first, boil the potatoes in their uniforms. Cool it down and clean it up.

We put canned fish in a cup, while the oil must be drained from them. Following Italian traditions, I use tuna, but in principle this is not necessary, it can easily be replaced, for example, with mackerel or sardines.

Grind the boiled potatoes to a puree state and add it to the fish.

Here we add grated Parmesan, salt, pepper, add finely chopped parsley, mix lightly.

Then, in the same cup, break the eggs and mix again.

Pour the breadcrumbs into a small bowl. From the resulting mass we roll small balls, at the same time, so that they do not stick, we periodically lubricate our hands with vegetable oil. Roll the resulting "balls" in breadcrumbs.

Fry on each side, over medium heat, until golden brown. I want to draw your attention to the fact that the oil should be well warmed up, but not hot, otherwise the potato balls will burn very quickly on the outside and will not fry inside. We get it with a slotted spoon.

Place cooked potato balls on paper towels to drain excess oil.
