We put the dough: In a bowl, mix the sourdough, milk, yeast, a little sugar and 100 g of flour and leave to ferment for 8-10 hours.
Add egg, sugar, cocoa and butter to the dough - mix. Gradually add flour. The dough should be firm and elastic, but not tight. Put the dough in a bowl, cover with a film and leave to ferment for 2-2.5 hours. 30 minutes after the start of fermentation, make one punch. After an hour, do another stretch.
Filling: Rinse and dry the berries. Chop the chocolate with a knife.
Roll out the dough into a rectangular layer 0.5 mm thick. Spread berries and chocolate over the entire surface of the dough. Roll into a roll. Cut the roll lengthwise and weave the flagellum, then roll up the snail. Place on a baking sheet lined with a non-stick mat. Cover with foil and leave to proof for 1.5-2 hours. Bake in a preheated oven at t 180 C for 25-35 minutes. Brush with glitter syrup if desired. Cool on a wire rack.
