This dessert got its name due to the fact that initially redgred was prepared with the addition of cereals, for example, semolina is still used in some family recipes. Modern recipes more often replace cereals with potato starch, which allows you to get the consistency of a pudding. The main ingredients of redgred are red berries: currants, raspberries, strawberries and the like. Redgred is served both hot and cold as a dessert. Most often, milk, whipped cream, or vanilla ice cream are added to balance the refreshing taste of fruit acids.
Ingredients: Any red berry, ideally red currant, sugar, water, potato or corn starch, vanilla sugar, heavy cream or milk, for serving
Cooking method:
Prepare all the necessary ingredients.
Dissolve starch in half a glass of water and set aside.
Rinse thoroughly and sort the berries. I have strawberries. Place the berries in a deep saucepan and pour three glasses of water. Bring to a boil over high heat, reduce heat to medium and simmer for about 5-10 minutes until the berries are soft.
Remove from heat and strain the resulting mass through cheesecloth or a fine sieve, you can pierce with a blender.
Return to saucepan, add sugar and bring to a boil. Stirring constantly, pour in the dissolved starch. Cook for 1-2 minutes until a thick jelly-like consistency is obtained and immediately turn off the heat.
Pour into serving bowls, cover with cling film and refrigerate for at least 2 hours.
Whip the cream with vanilla sugar, decorate the porridge with it, sprinkle with fresh berries and you can enjoy the taste!
