Ingredients: Pumpkin, Chicken fillet, Cream, Onion, Garlic, Cashew, Pumpkin and sunflower seeds, Salt, pepper, coriander
Cooking method:
Peel the pumpkin and cut into cubes. Peel and finely chop the onion and 1 clove of garlic. Cut the chicken fillet into slices.
In a saucepan, heat 2 tbsp. vegetable oil and add coriander, heat for 30 seconds until aroma appears. Add onion, garlic and pumpkin cubes. Cook, stirring for 10 minutes.
Add cashews and chicken fillet. Pour in 800 ml of water (less if you like a thicker puree soup). Salt and pepper. Boil 30 minutes.
Remove chicken and cool slightly. Puree the soup with an immersion blender, add the cream and heat over low heat for 3-4 minutes.
Cut the garlic clove into thin slices. In a frying pan greased with vegetable oil, fry garlic slices with pumpkin and sunflower seeds and sesame seeds and cashew nuts.
You can submit! Ladle the soup into bowls, top with the chicken slices, and sprinkle with the cashews and toasted seed and garlic mixture.
