Those. if it worked out for a schoolboy, then even a novice cook will succeed. Now I am already preparing these cutlets for my family. Tried with pork, beef and chicken. I personally recommend the chicken. More gentle for my taste. Over the years, I added mustard grains (ready-made), sesame seeds and spices for chicken / beef / pork, depending on the meat used, to my mother’s recipe. Of course, if we use spices, then without any glutamates, salt and other unnecessary things. Grind the pepper before adding to the meat.

Today I'm cooking with chicken. Rinse chicken fillet, dry with paper towels, cut into small cubes. Not a meat grinder, just a sharp knife. In order to make it more convenient to grind, I cut the meat into plates and send it to the freezer for 1.5-2 hours.
Onion and garlic cut into small cubes. Larger onion, smaller garlic. Basically, think for yourself. The juiciness and taste of cutlets largely depend on it. Onion, as for me, should be felt. Smaller or larger cut, you decide to taste. It is better not to grind in a meat grinder and in a blender. If you do not like onions, forget about this recipe, because without it it will become much more boring, and maybe even tasteless.
Add onion, garlic, eggs, starch, mayonnaise, all spices and salt to the chopped meat. Mix everything very well and refrigerate for 2-4 hours. This is the recipe... But I cook all this in the evening, and by lunchtime the next day I start frying and sizzling delicious cutlets. Then fry as needed. Fresh is always tastier.
Add fresh herbs, appetizing potatoes or buckwheat to the cutlets, as for me, it will be the very thing... A simple lunch or dinner is prepared easily and with pleasure. Bon appetit and enjoy your life. 🙂
