Lent is coming soon, which means it's time to share recipes. Today I have a completely lean dish. Sauté pumpkin with beets.
Ingredients: pumpkin, medium zucchini, medium eggplant, celery (optional), tomato, fresh pepper, beetroot, garlic, vegetable oil for frying, salt
Cooking method:
Let's start cooking. 👉 first you need to put the beets on the boil. 👉 cut the eggplant into rings and soak in cold water with salt for 15 minutes. 👉 cut the pumpkin into large cubes and fry in a pan until fully cooked, add a little salt, empty the pan.
👉 crush 1 clove of garlic, throw it into a frying pan with oil, cut the zucchini into rings as well and fry in a frying pan with eggplants until tender, empty the frying pan. 👉 celery (optional), pepper and tomato cut into cubes and fry in a pan, release it.
👉 By this time, the beets will be cooked until half cooked. Peel the beets, grate, crush the clove of garlic, fry the garlic in oil, add the beets and bring to readiness, about 10 minutes over medium heat with constant stirring.
👉 after we add all the previously fried vegetables and salt. 3 more minutes in the pan. Decorate with greenery. Bon appetit😇.
