Stuffed zucchini boats

Ingredients: zucchini (1 pc.), Minced meat, Carrots, Onions, Garlic (2 teeth), Tomato, Cheese, Vegetable oil for frying, Salt, Ground black pepper

Cooking method:

Wash the zucchini and cut in half lengthwise. Carefully remove the core with a teaspoon, being careful not to damage the zucchini.

Cut the zucchini flesh into cubes. We also cut the onion into cubes. Three carrots on a grater.

Mince the garlic. Cut the tomato into rings (circles). If the tomato is large, then in half rings. Three cheese on a fine grater.

Put the onion and garlic in a pan with vegetable oil, fry until transparent. Then add carrots and fry a little more, but not completely. Fry the zucchini pulp separately until soft.

Add salt, pepper to the minced meat, mix well. In a separate pan, fry the minced meat a little.

Then add about 10 grams of cheese to the minced meat. Mix well.

Zucchini can be slightly salted. But I didn't. And one more nuance: I didn’t bake the zucchini first, I stuffed them raw.

Now let's start stuffing the zucchini. We divide the minced meat into two parts and lay it out in boats. Put the fried vegetables on the minced meat.

Lay the tomato slices over the vegetables. Sprinkle with cheese on top. Close with foil.
