A very interesting and unusual recipe that has a bright taste, a beautiful and appetizing look and will decorate the table even in the dark with its bright colors, and what an appetizing smell! #menu
Ingredients: large carrots, sliced, chopped red bell peppers, small, young zucchini, green beans, fresh or frozen pea pods, mushrooms, chopped chili without seeds, peanut butter, onion, chopped, chopped ginger, cane sugar, coconut milk, chopped coriander, red curry paste, salt and pepper
Cooking method:
Cut all the vegetables into pieces convenient for you and fry in a pan until al dente. Saute the onion and ginger in a second pan, then caramelize. Add prepared vegetables, pour in coconut milk. Cook for 5 minutes, add all seasonings. Let the curry rest for a few more minutes and you're done.
How to caramelize onions: Heat a cast iron skillet over high heat - reduce heat to medium and add oil (butter or olive oil) warm, then put the chopped onion and reduce the heat to a minimum simmer the onion on the fire, stirring occasionally until it becomes transparent. This may take about 10-15 minutes.
