If simple pancakes are no longer impressive, but you still want something interesting and tasty on Maslenitsa, then proceed to pancake interpretation. I propose to start with the curd filling. *This amount of dough will make about 30 pancakes. And the toppings for 15-16. Therefore, be prepared for the fact that you will have a filling left. Or you can increase the amount so that it is enough for all the baked pancakes. #Pancake week
Ingredients: dough:, milk, wheat flour, eggs, vegetable oil, sugar, salt, filling:, cottage cheese (7-9%), egg, sour cream, vanillin
Cooking method:
Dough: Separate the whites from the yolks. Beat separately with a mixer. Add salt to egg whites, beat for 2-3 minutes until slightly stiff. Gradually add sugar to the yolks. Add milk and vegetable oil to the yolks. We mix.
Pour the sifted flour into the milk and eggs. We begin to knead the dough so that there is no lump in it. You can use a mixer. Next, add half a glass of freshly boiled water and immediately mix the dough. It is with the help of water that we regulate the density of the dough.
Add the beaten egg whites to the almost ready dough and mix gently.
Lubricate the pan with butter and bake pancakes. If desired, each can be additionally lubricated with butter. *When baking, I use a mixture of butter and vegetable oil. I mix both types in a deep plate, and then dip a silicone brush into the oil and grease the pan. You don't have to grease the pan at all.
Filling: mix the beaten egg with sour cream, cottage cheese and vanilla. *So that the filling is not liquid, it is advised to add a little semolina.
We put 1-1.5 tbsp. cottage cheese on a cooled pancake.
We wrap our filling, folding the pancake with an envelope.
Do the same with the rest of the pancakes.
After we heat the pan, pour vegetable oil and fry our envelopes on both sides until golden brown.
Ready-made pancakes can be served with sour cream.
