Rassolnik according to the recipe from the Soviet canteen

Hello, today I want to share a recipe for Rassolnik from a Soviet canteen. Follow my instructions exactly and you will get the most delicious pickle.

Recipe:

  • Beef on the bone - 500 gr.
  • Potatoes - 400 gr (3 pcs)
  • Cucumber pickle - 150 ml.
  • Carrot - 1 pc.
  • Onion - 1 pc.
  • Pearl barley - 70 gr.
  • Pickled cucumbers - 200 gr. (3 pcs)
  • Tomato paste - 2 tbsp.
  • Salt - 2 tsp
  • Bay leaf - 3 pcs
  • Seasonings - to taste (I have suneli hops - 1/3 tsp)
  • Water - 3-4 liters.

(Calculated on the Pot - 4l.)

COOKING METHOD

Salt the meat, fill it with water and set to cook for 60 minutes over medium heat.

while the meat is cooking, pour pearl barley with boiling water

As soon as the meat is cooked, we take it out of the broth, put pearl barley in the broth and cook. Separate the fillet from the bones and cut into pieces

put back in broth

Peel potatoes and cut into cubes.

Grate the carrots, chop the onion, cut the pickled cucumbers into cubes

first fry the onions, then add the carrots, fry for a couple of minutes, then add the cucumbers and pour in a couple of ladles of broth and simmer for 10 minutes

now add tomato paste, mix

and add to meat with barley

pour cucumber brine, bay leaf, salt

Cook for another 10 minutes, turn off, let the soup brew for 20 minutes and serve.
