Today I want to invite you to cook pies with incredibly soft, airy and at the same time thin dough and juicy filling.
I'll make cabbage pies. But from this dough you can make pies with any filling that you like.
The dough is prepared easily and simply, by the time you prepare the filling - the dough will already fit.
Cooking method
Dough
1. Add salt, sugar, dry yeast to the sifted flour. We mix.
2. Pour warm milk, melted butter and egg into the dry mixture.
3. Knead the dough for about 3-5 minutes, until smooth.
I knead the dough with a silicone spatula. You can knead the dough with a mixer with a dough attachment. Or by hand, but you need to put on a glove so that the dough does not stick.
If you touch the dough with your hand, the dough will be sticky. It will gather into a ball, but will not keep its shape.
4. We remove the dough for proofing in a warm place for 50-60 minutes. The dough should increase in volume by 2-2.5 times. While the dough is rising, you can prepare the filling.
5. Sprinkle the work surface with flour, transfer the dough to the work surface, lightly punch down and divide into 12 parts.
6. We roll each piece into a ball, cover with cling film, leave it on the table for 10-15 minutes, so that the dough comes up again.
7. We roll the ball into a circle, put the filling in the center, pinch the edges, form a pie.
8. We shift the pies on a baking sheet covered with parchment paper, put in a warm place to rest for 10-15 minutes.
9. Lubricate the approached pies, using a silicone brush, with yolk mixed with milk.
10. We bake in a preheated oven at a temperature of 180-200 ° C, approximately 20-25 minutes, until a beautiful ruddy color.
Filling
1. Fry the onion in vegetable oil until golden brown.
2. Add chopped fresh cabbage to the fried onion and sauté until soft.
3. Add sauerkraut, ketchup, salt and pepper to taste. Simmer everything together for 10-15 minutes.
4. Cool down the filling.
Ingredients for 12 pies:
(a glass with a volume of 200 ml.)
Dough
- Wheat flour - 260 g (2 cups)
- Salt - 6 g (1 tsp. l.)
- Dry fast-acting yeast - 5 g (1.5 tsp. l.)
- Sugar - 20 g (1 tbsp. l. no top)
- Warm milk - 170 g (ml)
- Butter - 30 g (1.5 tbsp. l.)
- Egg - 1 pc.
For lubrication
- Yolk - 1 pc.
- Milk - 1 tbsp. l.
Filling
- Fresh cabbage - 300 g
- Sauerkraut - 200 g
- Onion - 1 pc.
- Vegetable oil - 2-3 tbsp. l.
- Ketchup - 2-3 tbsp. l.
- Salt, pepper to taste
