In the season of zucchini, I always harvest them for future use - I freeze them. I have 3 freezing options, I will share with you. If you have not frozen before, or thought that frozen zucchini somehow differ in taste, then you are mistaken.
Be sure to try it, freeze at least a small batch - in winter you will thank yourself.
How to freeze zucchini for the winter:
Method one
We rub the zucchini on a coarse grater, squeeze it so that there is no excess liquid and immediately place it in a bag that needs to be tied well. We squeeze the package a little so that the zucchini is distributed in a flat layer - and into the freezer.
Then it is very convenient to use for cooking squash pancakes, you can add it to cutlets - it will be very juicy and tasty.
Method two
We cut the zucchini into large rings, remove the middle with seeds, put them in bags - and in the freezer. Then you can cook stuffed zucchini rings. Put some filling in the middle: minced meat or mushrooms, or cheese + chicken, etc. And then bake in the oven.
Method three
Cut the zucchini into small slices or cubes 2-3 cm in size. Also freeze in a bag. Then it is very convenient to add to stew or just stew with other vegetables.
This year I also want to try to freeze them with “boats”, so that later I can also stuff and bake them. If everything works out, I'll tell you.
