In general, for juiciness, I add onions, and in manti a little water directly into the minced meat. I didn't add any other special ingredients. And to be honest, I didn’t even suspect that something else could be added to the stuffing for dumplings and manti for juiciness, because these are not cutlets.
And recently, in the comments under one of the recipes, where subscribers discussed dumplings and manti, a reader advised me to add... a little zucchini.
It must be grated and added to minced meat. The proportions are all by eye, I don’t put a lot, about the same as onions.
And indeed, dumplings and manti are very juicy and the taste seems to be more tender. In general, I really liked it! Especially manti - just delicious! Try it too!
