ICE CREAM
- I mix gelatin with water and leave to swell.
- I chop strawberries and rub them through a sieve.
- I add sugar and a teaspoon of lemon juice to the strawberry puree.
- Bring to a boil and dissolve the sugar.
- I turn off the heat and add the swollen gelatin to the strawberries.
- Let the puree cool to room temperature.
BASE
Preheat oven to 175°C
- Mix dry ingredients with cold butter into crumbs.
- I also add 1 egg yolk there and quickly knead the dough.
- I spread the dough on the parchment into pieces.
- I send it to the oven for 8 minutes.
- Let the finished cookies cool down.
Lower the oven temperature to 90°C.
MERINGUE
- Beat the remaining egg white until fluffy.
- In the process, I add 1/3 teaspoon of lemon juice.
- I plant the meringue in small portions.
- I send it to the oven (90°С degrees) for 1-2 hours until completely dry.
Now this is the only way I make chocolate ice cream: no cream, no chocolate and no ice cream maker.

CAKE ASSEMBLY
Bottom of the cake
- I cover the bottom of the ring with cling film and lay the cookies down.
- Whip cold heavy cream until fluffy.
- I pour in the cooled strawberry puree.
- I pour the whole mass into the ring and distribute it so that there are no voids.
- I carefully move the ring to the freezer.
Top of the cake
- I whip 100 g of cold heavy cream to a fluffy mass, pour them with broken meringues and mix.
- I take the bottom of the cake out of the freezer and put the meringue cream on top.
- I put the cake in the freezer until completely stabilized.
I transfer the finished ice cream cake to a serving plate.
