Alu patra - very unusual and delicious potato rolls. You can make a meatless with vegetables or meat or fish filling.

Ingredients for the dough:

100 ml water
0.5 hours. l. salt
200 gr. flour
1 tbsp. l. vegetable oil
pinch of ground turmeric
sesame

For filling:

1 kg potato
1 h. l. Sahara
1.5 hours. l. salt
a bunch of small favorite herbs (parsley, dill, cilantro, basil)
1/4 h. l. curry
pinch ground ginger
1.5 hours. l. sesame seeds

Preparation:

1. First you need to prepare the stuffing. To do this, wash, peel and boil the potatoes.

2. Add chopped greens, sesame seeds, salt, sugar and spices, mix well.

3. Now it's time to do the test.
Mix the sifted flour, turmeric, salt, water and oil. Knead elastic dough.

Put it in a bowl, cover with a towel and leave for 30 minutes.

4. Roll dough into a thin layer of 3-4 mm thick. It should be similar to the thin pita.

5. Put the filling on the dough chilled crushing her hand. Distribute evenly, that there are no lumps or bumps.

6. Gently roll your hands with flour dough with the filling in the roll.

7. Chop roll into slices 2-3 cm thick. No more and no less. The knife should be sharp enough not to tear the dough and does not wrinkle the pieces when cutting.

Put the pieces of roll on floured surface.

8. Preheat a frying pan in vegetable oil. It should be at least 3-5 Art. l.

9. Put the pieces of roll into the oil and fry them until golden brown.

10. Fry slices 5-10 minutes, then remove from the pan and place on a paper towel.

11. Alupatry can serve as a snack to vegetables and first courses or as garnish. When serving sprinkle with sesame seeds.
