Soup in Uralsk with millet. My recipe

A bit unusual soup because they are prepared with millet. But this does not spoil the taste of this dish. On the contrary, the soup are obtained simply excellent. Be sure to try it!

Ingredients for boiling by-Ural:

  • cabbage - 500g
  • broth / water - 3 liters
  • millet - 2 tablespoons
  • Carrots - 1 pc
  • Onions - 1 pc
  • celery root - 50g
  • tomato paste - 70 g
  • Garlic - 2-3 cloves
  • salt to taste
  • pepper to taste
  • sugar - 1.5 teaspoons
  • citric acid - pinch (if you like)
* Potatoes are optional, but I do not add. I think here it once.
As for meat, then the soup can be cooked like meat, and without it.

In deep frying pan or saucepan put shredded cabbage, tomato paste, add 1 of vegetable oil, a little water or broth and simmer under a closed lid 30-35 minutes.

Meanwhile, in a separate pan cook zazharku of onions, carrots and celery. Separately triturated with garlic salt.

In broth put millet, stewed cabbage with tomato paste and cook for 20 minutes, then add there zazharku from vegetables put bay leaf, sugar and salt to taste and citric acid (not necessary). Boil 10 minutes.

Now, we are turning off the fire, adding garlic, mashed with salt, and give for 10-15 minutes. Serve the soup in Uralsk with sour cream and herbs. Bon appetit, my dear readers!
