Preparation:
First shinkuem cabbage. I usually cook a lot at once this salad. Ingredients are listed on 4 kg of cabbage. When you are ready, for example, 2 kg, respectively, reduce the proportions of all 2 times.
Now on a coarse grater rub the 4 carrots, cut finely 2 onions, shred 3-4 cloves of garlic (garlic if desired). Now we mix all, but do it gently. Cabbage or pinch, it should not let the juice.
Next, make a marinade. Eighteen liters of water bring to the boil, add 4 tablespoons of salt, 250 g sugar and 200 g of vegetable oil.
When the salt and sugar dissolve, add 150 gr Vinegar 9%. Just be careful! Do not pour all at once - pour vinegar on a bit! Otherwise, all the marinade "run away".
Bring to the boil, but should not boil over 30 seconds. Now pour the hot marinade cabbage. Adding 2 tsp honey and 2 tablespoons cranberry or cranberries (if any) and all thoroughly mixed.
After 3 hours on-Petrovsky sauerkraut is ready! Be sure to try, it is sooo delicious!
