Ingredients 3 banks of 1 l:

1 kg eggplant
0.5 kg of paprika
300 gr. carrots
0.5 kg onions
1.5 kg of red tomatoes
salt
ground pepper
vegetable oil

Preparation:

1. Eggplant wash and cut into cubes about 2 x 2 cm. Season with salt and leave for 15-20 minutes, went to the bitter juice.

2. Wash peppers, remove seeds and cut as well as eggplant - large pieces.

If you like spicy, add 1 pod hot pepper or bitter. Only remove the seeds carefully, because due to them can swell the bank.

3. Onion peel and finely chop.

Fry onion vegetable oil until soft. Brown or crispy fried onions will not go. Only soft, slightly stewed.

4. Carrot Wash, peel and grate. Add the carrots to the onions, stir and fry for 5 - 7 minutes.
Then shift into a deep sauté pan or kettle, cover with a lid.

6. In this same pan with vegetable oil fry pepper. Fry until half. Transfer the peppers to the onions and carrots.

7. Eggplant rinse with cold water, squeeze and frying in oil until soft.
Also send eggplants in a saucepan to vegetables.

8. Tomatoes pour boiling water for 1 - 2 minutes, then drain the water and pour them with cold water.
Clear tomatoes from the skin and then mince.

9. Tomatoes extinguish 10 - 15 minutes in a small amount of vegetable oil.

10. Pour the tomato sauce to the vegetables, season with salt and pepper to taste.

Güveç Stir and cook until ready on low heat or the oven.

11. Hot güveç expanded in hot sterilized cans, screw caps and flip boiled banks.

Wrap the jars with a blanket and leave until cool.

Store in a cool dry place.
