Before I left on maternity leave, I worked for a small company with a very tight-knit and cohesive team. We always celebrated all the holidays together in the office, especially the fun we were celebrating birthdays. And every year, colleagues asked me to prepare this salad. It's very simple, but incredibly delicious, probably the whole thing combined products.
So, for the preparation of salad you will need one large or two medium-sized eggplant. Vegetable must pierce fork and bake in oven at 180 degrees. It will take approximately 30-40 minutes.
While the eggplant is in the oven, you can marinate onions. I always use for this salad of red onion, I cut half-rings and fill it with 1-2 tablespoons 9% vinegar and periodically stirred.
Further, after the eggplant has cooled down completely, clean it from the skin.
Then cut it into cubes of medium size.
Add to eggplant marinated onions and, if you have time, you can leave them together for some time.
Now, cut the tomatoes in the same cube, like an eggplant. I took it and red and yellow tomatoes, salad to look more colorful.
Next, place the cheese in this salad is good cheese "Sirtaki", cut it in the same cube.
And, of course, parsley.
Salad needs a little salt and dressed with olive oil. If desired, drizzle with balsamic vinegar, but without it incredibly delicious salad, which is a nice to share not only with colleagues but also with relatives. Be sure to try to cook.
