These burgers fish can and should apply for a festive table! They are unusual, juicy and delicious! Recommend!

Ingredients:

For the stuffing:
1 kg of fish fillets (better river fish)
2 pcs. onions
3 tbsp. l. butter, roasting (saute)
2 slices fresh white bread
Article 0.5. milk
Article 0.5. whipping cream
egg white
1 tbsp. l. salt without top
ground white pepper

For filling :

2 tbsp. l. dill (chopped)
4 tbsp. l. finely chopped boiled shrimp (can be replaced with grated crab sticks)
fried onions
salt
pepper
100 gr. butter (cut into cubes and freeze)

For breading:

4-6 slices of white bread (loaf)
3 tbsp. l. flour
egg
oil for frying

Preparation:

1. Fish fillets thawed and rinsed in running water. Drain on paper towels excess moisture.

2. Prepared from fish fillets minced - mince or chop the blender.

3. Onions cleaned and finely cut, fried in butter until golden brown.

4.Zalit wheat bread with milk and leave soak.

5. Fish fillets once again to scroll through a meat grinder, along with bread and onions to give a viscous and homogeneous stuffing.

Season the ground meat with salt and pepper to taste.

6. Important! Mince the need to recapture a little on the table or wooden board to remove excess air. So patties are denser. But not too long.
Pour in cold cream stuffing.

7. Beat the egg whites with a mixer until a dense mass and put it into the stuffing. After kneading can be a little beat off the stuffing.

8. Prepare the filling: Mix fried onions, chopped shrimp or crab sticks and fennel. Add salt and pepper to taste.

9. White bread for breading cut into very small cubes so that they all get the same. Dry bread cubes in the oven, but only slightly - the color does not change much.

10. Pour into a shallow dish meal.

11. In a separate bowl, beat the egg.

12. Make a "chestnut" with wet hands: from the portions of ground to make the cake, which put 1-2 teaspoons of the filling and 1 cube of frozen butter.

13. Connect the edge of the cake and make a smooth ball forms. Croquet breaded in flour, then dip in egg and roll in breadcrumbs. Possible hands "pressed" or "glued" to crackers patties that they are better kept.

14. Heat the oil in a deep frying pan.

Fry the croquettes in hot oil on all sides until golden color and then cook until ready in the oven. About 15 minutes.
