This is a vegan salad suitable for Lent and especially useful in spring, as it is prepared with juicy vegetables.
The recipe is taken from a cookbook co-written with Meghan Markle. It contains 50 different recipes.
The Duchess of Sussex herself wrote the foreword to the book and talked about it in her promo video:

Shirazi vegetable salad
Ingredients:
3 large red tomatoes (slightly tough)
3 medium cucumbers
half head of red onion
juice and zest of half a lemon
2 tbsp. l. vegetable oil (sesame, cottonseed, olive, flaxseed or regular sunflower)
2 pinches of ground black pepper
1 pinch ground coriander
salt to taste
cilantro greens
Additionally (optional):
radish
green onions
Preparation:
1. All vegetables (cucumber, tomato and onion) are cut into the same small cubes. Not exactly tiny, but still smaller.
2. Remove the zest from the lemon with a grater and squeeze the juice.
3. Chop the greens finely.
4. Combine cucumbers, tomatoes and onions in a salad bowl. Add greens.
5. Sprinkle the salad with lemon juice, sprinkle with zest, salt. Don't forget about ground pepper and coriander.
Season the salad with vegetable oil and serve.
Optionally, the salad can be "expanded" by adding radishes or green onions.
