I really wanted to try and try such a recipe in practice, since I love chemistry since school and it's not difficult to buy such ice now.
In my city it is from 80 rubles. per kg, sold in briquettes and granules. In summer it can be more expensive.
What is dry ice?
It is a substance that is produced from carbon dioxide (CO2). The same gas that we breathe out or carbon dioxide.
From the course of chemistry: all substances can be in three states of aggregation: liquid, gaseous and solid.
And only dry ice is solid and gaseous.
What is dry ice made for?
Most often for the food industry. It is used for shock freezing of products (berries, vegetables) in order to preserve freshness faster and for longer.
Dry ice in products is absolutely safe if you follow the instructions and safety precautions.
In addition, dry ice has long become the basis of various entertaining chemical shows: a spectacular veil of fog emanates from pieces of matter.
What shouldn't be done with dry ice?
1. Play, grab or throw - dry ice can cause frostbite in just a few seconds.
Important! It is very easy to burn yourself with ice. The temperature of the solid briquette is about -79 degrees Celsius.
The burn will be as if burnt by fire. Therefore, you cannot take dry ice with bare hands - you should use thick gloves.
2. Use dry ice in a closed and small room. The fog that is released during the melting of carbon dioxide is harmless under one important condition - the room must be well ventilated.
3. Put ice in warm water. Even with good air flow, this should not be done. Dry ice, in contact with water, melts very quickly, or, to put it correctly, melts.
This produces too much steam or fog. So he can cause breathing difficulties.
Conclusions: we open the window, put on gloves or oven mitts and try not to bend low over the pairs.
Carbon dioxide dissolves very quickly in the air and does not pass into food.

Ice cream recipe from the program "Cooking with Alexey Zimin"
Ingredients:
0.5 l heavy cream
100 g caster sugar
0.5 tsp l. salt
1 vanilla pod (1 bag of vanillin)
200 gr. fruit puree
1 kg dry ice
Preparation:
1. Combine cream, vanilla, icing sugar and salt.
2. Add fruit puree.
3. Wrap large crystals of dry ice in a thick towel and chop into sand with a rolling pin.
4. Pour ice into the creamy mixture and mix well immediately.
Advice: add dry ice to ice cream slowly to avoid hardening too much.
That is, you do not need to pour everything into cream at once - you just get a lump of milk ice.
