Spicy salted herring
1 liter of water
4 things. large herring
1 cup coarse salt (180 gr.)
1 tbsp. l. sugar with a slide
1 hour l. coriander seed
5 pieces. bay leaf
1 hour l. allspice peas
1 hour l. pepper mix
2 tbsp. l. vinegar 6%
Preparation:
1. To boil water. Add a glass of salt to boiling water. You can use only half of the salt if you want lightly salted fish.
Also put all the spices in the brine.
2. Defrost and rinse the herring. You can gut it and cut it into pieces. But it is tastier to salt with a whole carcass.
3. Place the herrings tightly in a bowl with high sides.
4. Pour 2 tbsp into the cooled brine. l. vinegar and pour the brine over the fish so that the herring is slightly covered.
5. Cover the fish with a flat plate on top and place a small weight. You don't need to press down too hard. The load is necessary so that the herring does not float and is all in the brine.
6. Leave the dishes with home-salted herring in the kitchen at room temperature for a day.
After 24 hours, you can eat or put in the refrigerator. Remove the cargo, of course.
It is also good to prepare salads and snacks from ready-made herring.
