In fact, it is a honey cake, but a little juicier. Let's try to bake and thus remember what desserts our mothers cooked.
Ingredients:
2 eggs
1 cup of sugar
100 g margarine or butter
2 tbsp. l. dark buckwheat honey
3 cups flour
1 hour l. soda
Cream:
250 g butter
1 can of condensed milk (boiled)
For syrup:
1 glass of water
3 tbsp. l. Sahara
Preparation:
1. Break eggs into a saucepan, add honey, sugar and butter in pieces. Put on medium heat. The mass must be constantly stirred so as not to burn.
After dissolving sugar, add soda. At this moment, a violent reaction will begin in the saucepan, and the mass will begin to increase in volume. As soon as the rise begins to decline, remove the dishes from the heat.
2. Sift the flour and add it to the egg mass in 3 stages. Knead the dough first with a spoon, then with your hands on the table.
3. Wrap the dough in plastic wrap and refrigerate for 1 hour. Remove the cooled dough from the foil and divide into 8 equal parts.
Roll each part into a round layer 0.5 cm thick, prick with a fork and bake at 200 degrees for about 5 minutes.
While still hot, the cakes need to be cut in a round shape or along the edge of the plate.
4. Dry the cakes in the oven at 130 degrees for about 20-30 minutes, and then grind them into crumbs with a blender or meat grinder.
5. For the cream, beat soft butter at room temperature until fluffy with a mixer. Carefully pour in the condensed milk in several stages.
Beat for 2-3 minutes until creamy. It is tastier with boiled condensed milk.
6. Boil syrup from 1 glass of water and sugar. You can add honey or cognac to taste.
7. Using a cooking brush, saturate each crust on one side with syrup.
8. Smear the cakes with cream and assemble the cake on a flat dish. Leave some cream to cover the top and sides of the cake.
At the end, sprinkle the cake with crumbs and refrigerate for 2-3 hours.
The finished cake is very reminiscent of childhood, holidays and family meetings with aunts from other cities of the USSR.
And on sale, the Ryzhik cake often looked something like this:
Remember this cake? Now you can bake it at home and treat your loved ones.
I wish you all health and patience! Everything will be fine!
