Kystyby - This is a traditional Bashkir, Tatar, Udmurt dish made from dough with filling.
Real kystyby is a thin unleavened flat cake, folded in half, stuffed with millet porridge or vegetable stew.

Recently, an adaptation for Russian European cuisine has appeared and kystyby is now cooked with mashed potatoes.

It is recommended to grease finished products with melted butter and serve hot.

Kystyby or Kuzikmyak with millet porridge

Ingredients:

500 gr. flour
1 glass of kefir
egg
1 hour l. salt
1 tbsp. l. Sahara

For filling:

1.5 cups millet
2-2.5 cups of water
salt
butter

How to cook:

1. Real Tatar kystyby are made with millet. Therefore, it is necessary to cook millet porridge in advance, but a little liquid. It is advisable to cook it in the oven in a pot. Sort and rinse the cereals first, pour clean water and cook until tender. Add butter and salt to taste.

2. For the preparation of cakes, it is better to take not fatty kefir, the dough will be soft, and the cakes will not break.

An important point! No butter is added to the traditional dish dough, although some recipes recommend it.

Add sugar, salt and egg to kefir at room temperature.

3. Add sifted flour and knead a sufficiently dense dough. In consistency, it should resemble dumplings, that is, a little steeper than manti or dumplings.

4. Roll the finished dough into a ball and leave on the table, rest for 20 minutes.
5. Roll the dough into a sausage and cut into 10 pieces. Form balls from the pieces and roll each into a thin cake with a diameter of 25-30 cm.
6. Fry the cakes in a dry frying pan on both sides.

Place the finished cakes in a stack on a wooden cutting board and cover with a towel until all the cakes are cooked.

7. When the porridge is ready, melt a little butter, grease the cakes on both sides and then spread the hot millet inside into half the cake.

8. Fold the kystyby in half. You can also grease the top with a brush with melted butter.

Ingredients for the filling:

1 kg of potatoes
1 glass of water
3 tbsp. l. vegetable oil
salt
onion
greens at will
50 gr. butter

How to cook:
1. Bake tortillas according to the recipe above. This is a classic version of the dough, but the filling can be varied as you wish.
2. Peel and boil potatoes in salted water. Drain off almost all the liquid, leave about a glass.
Mash the mashed potatoes, adding a little hot broth. Salt.
3. Finely chop the onions and sauté in vegetable oil, but only until soft. It does not need to be done until golden brown.
4. Any greens (dill, parsley, cilantro), if you really want, you can. The main thing is to rinse and grind.
5. Put all the onions from the pan into the hot puree, add the herbs and mix.
6. Melt the butter and brush the inside of the cakes with it.
7. Put still hot mashed potatoes inside on half of the flat cake and fold the free edge in half.
