Sea buckthorn: preparing a vitamin drink, sunny jam and amazing marmalade for tea

And what to do with this sea buckthorn? You can't eat much raw from a bush, only if you freeze it. And then how?
I am telling you where to use your stock of sea buckthorn berries to make it tasty and healthy.

Sea buckthorn drink with orange

Ingredients:

1.5 l boiling water
1 cup sea buckthorn berries
1 orange
half lemon
1 cinnamon stick or 0.5 tsp l. ground
1 star anise star
2-3 st. l. liquid honey (sugar is possible)

How to cook:

1. Scald the orange with boiling water and carefully remove the zest in the form of ribbons. Do not grater! You can use a knife or vegetable cutter.

Also, the orange needs to be cleaned of bitter white layers, disassembled into slices and removed from the shell. Cut into slices.

2. Leave a couple of tablespoons of berries for garnish, and rub the rest in mashed potatoes with a spoon or pestle.

3. Cut the lemon together with the peel into half circles or slices.

4. Add orange slices, zest and a part of lemon to a saucepan for sea buckthorn. Throw star anise and cinnamon here.

5. Pour boiling water over the contents of the saucepan, immediately close the lid and leave to infuse for 10 minutes.

6. Strain the finished drink, mix with honey and pour into a jug for serving. Decorate with whole sea buckthorn berries and lemon slices.

Serve hot (warms and soothes well) or cold (vitamins and refreshing effect).

Sea buckthorn jam - simple

Ingredients:

0.5 kg sea buckthorn
0.5 kg sugar
100 ml of water

How to cook:

1. Sort the berries, wash and dry a little in a sieve or colander.

2. Boil the syrup from water and sugar. To do this, boil water, add sugar and cook a rather thick syrup.

3. Pour sea buckthorn into syrup, stir and reduce heat to a minimum. Cook for exactly 5 minutes. Remove the jam from the stove.

4. Sea buckthorn jam must be cooled for an hour, during which time some of the berries will burst. If you want a thicker jam, then you can break the berries with a blender.

5. Once again, put the barely warm jam on the fire and boil after boiling for 2-3 minutes.

6. Arrange the jam in hot, sterile and dry jars. Close with screw caps and take out after cooling down.

Sea buckthorn marmalade

Ingredients:

0.5 kg sea buckthorn
0.5 kg sugar
200 ml of water
30 gr. gelatin (1 sachet) + water

How to cook:

1. Wash the sea buckthorn, pour into a saucepan and add water. Bring to a boil, add sugar. Boil the berries for 25-30 minutes.

2. Dissolve gelatin in lukewarm water according to the instructions.

3. Grind the finished sea buckthorn in mashed potatoes with a pestle or blender. Strain the resulting mass to remove the skin and seeds.

4. Boil sea buckthorn syrup, remove from heat and cool slightly.

5. Combine the hot sea buckthorn mass with gelatin, stir thoroughly until it is completely dissolved.

6. Pour the mixture into molds and let it set.

7. Remove the prepared marmalade from the molds and roll in sugar, icing sugar, coconut or cover with chocolate icing.
