Potato pancakes are ordinary - this is so, simplicity for ordinary people. But making delicious and hearty pancakes from potatoes with tasty additives is much more interesting, original and so delicious at home!
Ingredients:
1-1.5 kg potatoes
200 gr. any sausage or ham (sausages, boiled meat, minced meat fried with onions can be used)
egg
100 g hard cheese
1 hour l. salt without a slide
0.5 tsp l. ground black pepper
3 tbsp. l. flour
1 hour l. potato starch
vegetable oil for frying
How to cook:
1. Peel the potatoes and grate on a medium grater. Not on a large one and not on the one that makes mashed potatoes!
Squeeze out all the released liquid from the potato mass. Add salt and stir.
2. Freeze the cheese a little in the freezer and also grate on a fine grater into real crumbs, not chips.
3. Combine cheese with potatoes. Break a large chicken egg into the mixture, add pepper, flour and starch. Knead the potato dough with a spoon.
4. The sausage can be cut into very fine strips or cubes, or also grated.
5. Then there are two options.
The first one for the lazy: mix the shredded sausage with the potato cheese dough.
And the second one for experienced and aesthetes: make cakes from potato dough, put the sausage stuffing in the middle and give them the shape of cutlets-pancakes.
Both options can be rolled in breadcrumbs or breaded in flour.
6. Heat vegetable oil in a frying pan and fry potato pancakes on both sides over moderate heat for 3-5 minutes under a lid.
Serve hot with sour cream.
