I never liked okroshka before, did not understand this dish at all. But once I tried okroshka from my mother-in-law and I liked it so much! Since then I fell in love with okroshka. And over the years I have found the perfect recipe for myself. I want to share with you all the nuances of making very tasty okroshka.
Below you can see my short video recipe for making okroshka. I am sure you will like:
First, let's prepare all the ingredients for okroshka.
Finely chop the greens (onion, dill, parsley) and transfer them into a deep bowl, where I will cook okroshka.
A little bit of the ambassador. Iiiii... 1st secret: I take a potato crush and begin to crush the greens well. Thanks to this, okroshka is obtained with a richer taste.
I cut the cucumber and radish into strips.
I cut boiled eggs and potatoes into cubes. But, I set aside 1/3 of the potatoes and do not touch them.
I always add boiled meat to okroshka. But if you wish, you can take boiled sausage. Cut the meat into cubes and add to the rest of the ingredients.
It's time for the potatoes, which I put aside. I take the crush again and turn the potatoes into mashed potatoes, transfer them to a bowl. Thanks to this the okroshka will be "more rich".
I add 50 gr. sour cream, 300 ml. kefir and mix well.
Now I add 350 ml. cold boiled water and stir again. Salt to taste and squeeze out the lemon juice - this will give the sour taste of okroshka. I have almost half a lemon.
I stir it, put it in the refrigerator for 15 minutes and then serve it to the table. Bon Appetit!
