The very ones!
If nostalgia periodically returns and you want to return to those distant times when the cutlets smelled of meat, then this recipe will be very useful to you.
Their taste is familiar to many from childhood, because it was these cutlets that were cooked in every school or served in factory canteens.
They are not at all like any other cutlets, they are juicy and tender.
Ingredients:
500 gr. pork
500 gr. beef
250 gr. wheat bread (saika)
120 g onions
2 tooth. garlic
1 hour l. salt without top
egg
1 hour l. ground black pepper
vegetable oil
water
breadcrumbs
Preparation:
1. Rinse the meat and dry with a towel. Cut into large pieces and scroll through a meat grinder 1-2 times. The lattice is medium.
2. Cut the bread into small pieces and cover with warm water. Leave it to soak for 5-6 minutes.
3. Peel the onion and cut into quarters. Peel the garlic.
4. Squeeze the water out of the bread.
5. Pass all prepared products through a meat grinder into a deep bowl for the minced meat.
6. Knead the minced meat, it's even good to beat it off. Season with salt and pepper the minced meat to taste, beat in the egg and mix well, slightly beating the minced meat.
7. Pour breadcrumbs into a small plate.
8. Form elongated patties from the resulting minced meat with hands soaked in water or oil, lightly patting them with your palms.
This must be done so that they thicken and there are no voids in the minced meat. Otherwise, the cutlets will fall apart when frying.
9. Roll the prepared cutlets well in breadcrumbs, lightly pressing the cutlets into crumbs.
It is better to make crackers on your own - by grinding dried wheat bread in a meat grinder.
10. Cutlets can be fried in vegetable oil and medium heat until tender.
Alternatively, place on a greased baking sheet and mark in a hot oven.
At 180 degrees, bake the cutlets for 15 minutes, then pour boiling water in a thin stream. No more than 0.5 cups and continue baking for another 15-20 minutes.
These patties are good with any side dish: buckwheat, pasta, rice, mashed potatoes or salad.
