Homemade tomato paste: I found the perfect recipe

It turns out so delicious that it is suitable for any dish or baked goods. For example, for pizza, cabbage rolls or pasta gravy. And stored well.

Ingredients:

4 kg ripe red tomatoes (not cream)
4 tbsp. l. coarse rock salt
0.5 cups olive oil (exactly that)

How to cook:

1. Sort the tomatoes and wash, cut into small pieces.

2. Transfer the tomatoes to a heavy-bottomed saucepan and place over low heat. With a low boil, simmer the tomatoes for 20-30 minutes, until tender. Stir occasionally with a wooden spoon.

3. Take a blender or meat grinder and pass all the tomato mass through them. You should make a puree.

4. The laborious process does not end there. Now you need to rub all the tomatoes through a fine sieve or a special device with which to separate the tomato pulp from the peel and seeds.

5. Collect the tomato pulp without skin and grains in one container. Add salt and olive oil. Mix.

6. Then take a baking sheet with high sides and pour all our tomato mixture into it.

7. Place the baking sheet in a hot oven at maximum temperature. I have 300 degrees in the oven.



But if the top darkens too much, then the temperature needs to be reduced.

8. Remove the baking sheet from time to time and stir the contents with a wooden spoon. The tomato pulp will become more and more thick, gradually turning into a paste.

9. Simmer tomato paste in the oven until the desired thickness is about
1.5-2 hours. It will change its color, become dark, with a brown tint.
After 1 hour of cooking, reduce the temperature to 250 degrees.

10. When the pasta is done, remove the baking sheet from the oven.

Now about storage. There are two ways.

First: tomato paste can be spread hot in sterile jars, pour a little calcined olive oil on top so that the entire surface of the paste is under oil and close the lid. Store in a cool place.

Second way: Arrange the cooled tomato paste in containers and put in the freezer. In winter, take out, defrost and use as directed. Its quality is not lost from freezing.
