Tomato sauce "Kuban" for the winter

I love all kinds of tomato sauces, for their spice and taste. And when they are made by hand, then they have no price at all. Natural, budgetary and very tasty - this is this sauce.

Ingredients:

3 kg of tomatoes, better than overripe
8 pcs. carnation
8 cloves of garlic
17 allspice peas
1 hour l. ground cinnamon
1 hour l. ground black pepper
0.5 tsp l. coriander seed
4 large onions
3 teaspoons of salt and sugar
5 tbsp. l. vinegar 6%

How to cook:

1. Wash, chop and mince very ripe and soft meaty tomatoes twice. If there is, then it is better to use a juicer, it will more thoroughly separate the seeds and skin.

Or, first, remove the skin by scalding the tomatoes with boiling water and then put them in a meat grinder, and then rub through a sieve, slightly boiling the tomato mass.

2. Pour the tomato mass into a saucepan and boil for 15 minutes over low heat, so that the volume slightly boils down and the excess liquid evaporates.
Now you need to boil the spices in the tomato sauce.

Put all our spices in a cloth bag: cloves, peppers, cinnamon, etc.
Dip the bag into the sauce and simmer for 15 minutes. Then remove the bag and discard it along with the contents.

3. Cut the onion into equal small cubes and put in the tomato paste, then add salt and sugar.

4. Kuban-style tomato sauce should boil for another 15 minutes without a lid, so that the onion reaches the desired state and the excess water is boiled.

5. At the end of cooking, pour in the vinegar, stir and pour the sauce into sterile jars. Close with boiled iron or screw caps hermetically.

Cool in the room and then remove to a cool place.
