We love Ukrainian dishes on our table. We rarely cook cabbage soup, but borscht is sacred! A couple of times a month, it is imperative to add 5 liters of borscht in a saucepan, sometimes with dumplings, more often simple, but very red.
And also potato pancakes, dumplings and bacon...
Although Ukrainian blood has long been mixed with Ryazan, Turkish, Siberian, Hungarian and Polish in our family, we still prefer Ukrainian cuisine, but with minor additions.
Today I will tell you how I cook several of our favorite Ukrainian dishes.
Zavivantsi (Zavivantsy) meat
Ingredients:
1 kg pork tenderloin
300 gr. fresh mushrooms
onion
hard cheese
salt
pepper
vegetable oil
Preparation:
1. Cut the meat into thin layers and beat off. Season with salt and pepper.
2. Grind mushrooms and onions and fry. Salt to taste. Add grated cheese to them.
3. Put the filling on the chops and twist - curl, into very tight rolls. Fry in vegetable oil, then heat for another 15 minutes in the oven.
Can be done not only with mushrooms. For example, with pickles, bacon, bell peppers, etc.
Mlintsi or mlinchiki (pancakes or pancakes)
Ingredients:
250 ml milk 3.2% fat
2-2.5 cups wheat flour
3 eggs
1 sec. l. Sahara
0.5 tsp l. salt
250 ml of boiled water
50 ml vegetable oil
Preparation:
1. Beat eggs with sugar and milk. Salt.
2. Gradually add flour to the mixture and pour in a glass of warm boiled water.
3. At the end, pour in sunflower oil. That's it, you can bake mlinchiki!
Serve with sweet fillings: curd mass, jam, honey, condensed milk, etc.
Liver
(accent on the last syllable) - and this is not about a liver or a cookie!
Ingredients:
300 gr. meat (pork, beef)
onion
carrot
garlic
1 kg of potatoes
1 can of canned beans (or 1 cup boiled)
vegetable oil
Bay leaf
salt
pepper
flour
sour cream
Rye bread
Preparation:
1. Cut the meat into cubes and lightly fry until crisp in vegetable oil.
2. Chop onions and carrots, also sauté in oil. Add flour (1-2 tbsp. l.).
3. Peel the potatoes and cut into large cubes immediately into pots.
4. For potatoes, meat and fried onions with carrots.
5. Put each pot 1 tbsp on top. l. boiled or canned beans. If you don't like it, you can replace it with a fresh tomato. Delicious too.
6. Season the pots with salt, pepper and 1 bay leaf.
7. Pour 1 tbsp into the neck from above. l. sour cream and 2-3 tbsp. l. water.
8. Cover the pots with a slice of black bread and put in the oven for 1 hour.
