How did the housewives get out in the difficult nineties, when food was on coupons? We remember and take note. Now these recipes are a real find and they will definitely come in handy.
Of course, first of all, these are the first courses.
Soup is a great way to keep a lot of people hot and hearty. Since it contains rich broth, meat or fish, fatty vegetables such as potatoes and cereals, or pasta.
My mom perked up making soups with... canned fish. For example, with sprat in tomato or other fish in oil and rice. Such is the type of "ear".
By the way, she and borscht I did it with such a tin. And when there was a stew, and in general a song. She cooks stew herself from any meat and taught me.
I still make ten liter cans of poultry or pork stew every year (fortunately, there are animals in the village), although everything in the shops is now in abundance.
Very good with such stew potato or buckwheat with fried onions.
For those who are not aware of cooking homemade stew: you need a cast iron or dish with a thick bottom, fill it tightly with pieces of meat, pour in water so that it does not cover the meat (ideally on a bucket cast iron 1 l water).
Cook on the lowest heat for many hours - at least 5. Until the meat begins to fall apart before our eyes. Add bay leaf, peppercorns and allspice, salt very hard.
Sterilize the cans, boil the lids with soda. Disassemble the hot meat into pieces without bones and put it very tightly in jars, pour the top with melted fat from cast iron.
Roll up and under the covers for 8 hours. Then take out to a cold place.
This stew can be used not only in soup, potatoes or buckwheat. But in pasta, rice, peas, or just on a slice of black bread. Mmmm... tasty!
But this is a distraction from the main topic. What should we eat so that both satisfying and economical? Are you tired of soups?
Remember cheese soup!
Cheese "Druzhba", but any budget cheese product will do. You will also need 100 grams. grated carrots, 100 gr. chopped onions, 2-3 cheese curds, and some potatoes.
Place vegetables in a saucepan, pour 0.5 liters of water and boil until tender. Season with salt, slightly pepper, add grated cheese and boil for 5-7 minutes. Serve with finely chopped herbs, croutons and sour cream if available.
Or Curly soup- an undeservedly forgotten recipe since the days of the USSR.
And they made pasta themselves in those years - noodles called. It was not only allowed into the soup, but also made with tomato paste and stewed meat sauce. And in the summer from fresh tomatoes and fried onions.
And sandwiches: grate toasted bread with garlic, sprinkle with salt or herbs. You can also use processed cheese or rub sausage on top, etc. - and into the oven.
Either sprat, pickled cucumber, boiled egg, pickled herring, grated carrots with chenos or beets, etc. What is in the house.
And what about the second? Potatoes in any form, cabbage, pasta, rice or buckwheat.
Our dad always cooked buckwheat. He first fried it in a dry frying pan, then boiled it, flavored with fried onions and seasonings. Served as a separate dish.
By the way, for saving, dishes in which the meat or fish component is prepared immediately with a side dish are ideal. That is, in which everything is immediately mixed. Something like pilaf or naval pasta.
It is convenient to boil a large saucepan or baking sheet of delicious food, which will be enough for tomorrow, and then put it in the refrigerator and reheat as needed.
