Georgian "Lecho" for the winter

Strange, of course, the combination of words in the name - Georgian and lecho, but it turns out to be stunned as delicious! As husbands say - this is the thing!

Ingredients:

3 kg of tomatoes
3 kg bell pepper
1 pod of hot or hot pepper
1.5 kg of onions
1 kg of carrots
2 tbsp. l. spice mixtures (coriander, nutmeg, cloves, or suneli hops)
5 bay leaves
10 allspice peas
head of garlic
bunch of cilantro
200 gr. Sahara
100 ml vinegar 9%
50 ml vegetable oil
1.5-2 tbsp. l. salt (to taste)
2 tbsp. l. good tomato paste

How to cook:

1. Wash and dry the tomatoes. It is advisable to peel off the skin. But if there is no possibility, then it is allowed to leave it as it is.
Chop the tomatoes into small pieces and mince or use a blender along with peeled garlic cloves. You need to make mashed potatoes out of them.

2. Pour the tomato paste into a large saucepan, put on fire and bring to a boil.

3. Peel carrots and onions. Grate the carrots on a coarse grater, cut the onions into half rings. You can use cubes.

4. Put carrots and onions in boiling tomato sauce, stir. Stir occasionally and cook over low heat for 40 minutes.

5. Wash the bell pepper, clean it from the stalks and seeds. Cut each pepper into 4-6 pieces. Not in straws, but in slices!

6. Put bell pepper, tomato paste in a saucepan with boiling vegetable mass, pour in vinegar and vegetable oil, add sugar and salt.

7. Cook the lecho for 10 minutes, then put in it a whole pod of hot pepper (small or medium) and a bunch of cilantro, tied with a thread, like a bunch.
Add a mixture of spices or seasonings, bay leaves and allspice to this. Mix. Cover the pan with a lid and simmer for another 10 minutes.

8. Sterilize jars and lids.

9. Before putting in jars, remove a bunch of greens and a pod of hot pepper from the salad. Mix the mass again and only then put it in hot jars. Roll up the lids immediately.

10. Turn the jars with the blank upside down so that the lid is pulled inward, wrap it well with a blanket and leave until it cools completely.

Store cans with preservation in the refrigerator, pantry or cellar. For storage in a room or an apartment, it is recommended to sterilize jars of salad before rolling for 10 minutes 0.5 liters.

Georgian lecho can be served as an independent snack or as an excellent addition to various meat dishes, boiled potatoes, rice, pasta.

We also use it for soups, stews and gravies.
