Ingredients for the dough:
1.5 cups flour
1 yolk
0.5 tbsp. l. Sahara
0.2 tsp l. salt
25 gr. butter (melted)
150 ml milk
1/4 part yeast bag (instant)
For filling:
200-300 gr. any minced meat
2 onions
2 large potatoes
egg
salt
pepper
greens
For the sauce:
2-3 tomatoes
1 zucchini
bell pepper
eggplant (if available, frozen)
1 clove of garlic
100 ml sour cream
salt
allspice peas
ground paprika
How to cook:
1. Dissolve yeast and sugar in warm milk, allow them to activate, and then cook steep yeast dough in the usual way. Let it come up in a warm place.
I cooked in a bread maker, the dough turned out to be doubled, not sticking to hands.
2. Add an egg to the minced meat (pork, a mixture of pork + beef and poultry), add salt and ground pepper to taste. Mix the mass very well and it is advisable to beat it into a bowl 5-10 times.
3. Peel and dice the onions.
4. Roll out a rectangular layer from the dough that has come up. 0.5 cm thick or thinner.
5. Put the minced meat on top of the dough, then chopped onion and grated potatoes on it. Add a little salt to the filling and sprinkle with chopped herbs.
6. Gently, holding the edges with your hands, roll the dough layer with the filling into a tight roll.
Press down a little with your hands to make it more dense.
7. Cut the roll into portions 4-5 cm thick.
8. Flatten each piece a little and place on a greased baking sheet.
Bake in a preheated oven (200 degrees) for 10-15 minutes on each side until browned.
Important! Rolls need to be turned over after 10-15 minutes with a spatula on the other side and bake the same amount.
9. Cooking the sauce. Wash and cut all vegetables for him. Except for garlic.
Put out or lightly fry and fry in butter.
10. Pass the resulting mass of stewed vegetables through a meat grinder with a fine grid (you can use a blender).
Squeeze the garlic through a press directly into the sauce and mix. Season the sauce with spices and seasonings chopped in a mortar or coffee grinder. Heat the sauce over low heat for 2-3 minutes to activate the spices. Salt.
11. Serve the mini rolls hot with vegetable sauce or cold separately.
