The first spring vegetables have already appeared and it means it's time to prepare delicious salads from them.
Radish salad with pickled cucumbers
Ingredients:
5-7 pcs. radish
4 pickled cucumbers
1 PC. red onion
2-3 pcs. boiled potatoes
1 hour l. mustard
2 tbsp. l. vegetable oil
2 tbsp. l. sour cream
parsley
salt
pepper
Preparation:
Wash the radish, peel and cut into thin slices.
Peel and chop the onion in half rings.
Cut the boiled potatoes without the skin in half and then into slices.
Wash and dry green onions and parsley. Cut in small pieces.
Mix all prepared ingredients in a salad bowl.
For dressing, combine vegetable oil with mustard, sour cream, salt and ground black pepper.
Season the salad with the sauce and leave to soak for 5 minutes.
Smoked chicken and radish salad
Ingredients:
200 gr. chicken meat (smoked leg or thigh)
a bunch of radishes
2 boiled eggs
green onions
fresh cucumber
0.5 h l. table mustard
2 tbsp. l. mayonnaise
salt
Preparation:
Cut the chicken and cucumber into thin strips, the radish into semicircles. Coarsely chop the eggs.
Chop the greens. Mix all the ingredients, salt and season with mayonnaise and mustard.
Radish salad with canned tuna
Ingredients:
10 pieces. radish
fresh cucumber
carrot
a can of tuna in its own juice
dill
leaf lettuce
2 tbsp. l. vegetable oil
salt
pepper
3 tbsp. l. lemon or orange juice
Preparation:
Thinly cut radish, cucumber and carrots into slices or semicircles.
Wash lettuce, shake it off and tear with your hands.
Finely chop the dill.
For dressing, pour citrus juice and oil into a bowl. Add a couple of pinches of salt and ground black pepper.
Put the vegetable salad on a dish, spread the canned tuna slices on top of the salad and pour over the dressing sauce.
Serve immediately.
