Of course, on New Year's holidays, fresh vegetable salads are "rich" and delicious dishes, but in summer there are vegetables and they are affordable. Holidays also happen in the summer.

So what to cook from ordinary cucumber tomatoes to surprise the guests at the celebration?

Vegetable salad with beans and gourmet dressing

Ingredients:

tomato
cucumbers
red onion
parsley
canned red beans (not in tomato)
2 boiled eggs
2 tbsp. l. French mustard beans
juice of half a lemon
vegetable oil
salt
2 pinches ground black pepper

How to cook:

1. Wash and cut tomatoes, cucumbers in halves, onions in half rings.
2. Peel the boiled eggs and cut into wedges. Chop the greens coarsely.
3. Mix the chopped cucumbers, tomatoes and beans from the jar without liquid, add the onion.
4. For dressing, combine mustard, lemon juice, pepper and vegetable oil, add salt to taste.
5. Put the salad in a nice dish, pour over the dressing. Lay eggs on top with wedges and decorate with herbs.

Vegetable salad with fried bread

Ingredients:

cucumbers
Cherry tomatoes
fetax cheese or other pickled cheese
wheat bread
olive oil
garlic
1 hour l. a mixture of dry herbs and spices
Red onion
leaf lettuce
pitted olives
salt

How to cook:

1. Cut cucumbers and tomatoes into approximately equal pieces. Cut the onions into half rings.
2. Heat the olive oil in a saucepan, fry 2-3 cloves of garlic in it.
3. Cut the bread into cubes and fry in oil.
4. Put lettuce leaves on a flat dish, top with a mixture of tomatoes and cucumbers, half rings of onions and bread cubes.
If desired, you can add boiled or smoked meat, chicken, salted red fish to the salad.
5. Sprinkle the salad with olives and cheese cubes, boned with a mixture of dry herbs and spices.
Salt and season salad with oil to taste.

Vegetable salad with shrimps and squid

Ingredients:

shrimp
squid
olives
salad mix
Cherry tomatoes
garlic
vegetable oil salt

How to cook:

1. Shrimp and squid (frozen), pour boiling water over and leave for 5-10 minutes. Then peel and, if you wish, lightly fry in vegetable oil with a clove of garlic.
2. Put the salad mixture on a serving dish, top with shrimps, cherry tomatoes, calamari rings, olives.
3. Pour the salad with the vegetable oil, salt and minced garlic sauce.
