Today I want to share with you a recipe for zucchini roll with chicken breast and cheese - a very tender and delicious roll turns out.

And for those who do not want to waste time and fiddle with the roll, there is a small life hack at the end of the article.

✅ For the preparation of the roll, I used the following products:

  • 2 small zucchini - 730 g,
  • 1 chicken breast fillet - 295 g,
  • suluguni cheese - 90 g,
  • 1 chicken egg
  • 40 g whole grain rice flour (or wheat)
  • salt, black pepper, dry garlic.

✅Cooking.

The first step is to tackle the base for the roll.

We rub the zucchini on a coarse grater, add a little salt, mix and let it stand for a while to release more liquid. Then we squeeze well.

Add the egg, flour, black pepper and a little salt to the zucchini (do not forget that we have already salted the zucchini). Mix well.

Take a silicone mat (or very good baking paper) and cover the baking sheet with it.

I even sprinkled olive oil on the silicone mat.

Distribute the squash dough over the rug with a rectangle 2-3 centimeters thick.

Put in the oven for 20 minutes at 200 degrees.

While the base for the roll is being prepared, we will prepare the filling.

You can use minced urine breast. I just chopped the chicken breast fillet finely with a knife and fried it in a pan without adding oil. Pepper, salt and generously add dry garlic.

Grate suluguni on a coarse grater.

Remove the squash base from the oven and let it cool slightly, so that it is more convenient for us to roll up the roll.

I warn you that the base lags well behind even the silicone mat, I had to pry it with a spatula and walk over the entire surface to separate the base.

Put the fried chicken breast on the base and sprinkle with suluguni cheese. Leave a little suluguni to sprinkle the roll on top.

We turn it into a roll and fix it with a spatula if there are holes.

Sprinkle the remaining cheese on top of the roll and put it in the oven for another 10 minutes.

The roll, when hot, is very tender. Let it cool slightly and chop.

⛔ For those who do not want to mess with the roll - the option is easier.

We also prepare the zucchini dough, the filling and lay in layers in a small silicone mold and in the oven for 25-30 minutes. Sprinkle cheese on top for 10 minutes.

Let cool slightly and remove from the mold.

KBZhU per 100 g of finished roll: K - 167, B - 17, F - 5.9, U - 11.3.
