I have a recipe for a chocolate roll with cottage cheese for you today!

Almost a cake to your taste, but it is easier and faster to prepare!

To prepare a roll, you need the following products:

  • 4 chicken eggs
  • whole grain flour (I have rice) - 60 g,
  • 20 g of cornstarch (you can take the same amount of flour),
  • 30 g peanut butter (optional)
  • 8-10 sachets of sweetener (1 sachet equals 1 g equals 5 g sugar),
  • curd cheese - 200 g,
  • soft cottage cheese 140 g,
  • baking powder - 1 tsp, cocoa 10 g and vanillin 1 g.

Cooking.

First, prepare the cake.

Separate the whites from the yolks. Beat the whites until strong peaks, adding a pinch of salt.

Mix the yolks with flour, starch, sweetener (4-5 sachets), baking powder. The mass turns out to be thick.

Optionally, you can add peanut butter to the dough, which will add a nutty flavor and reinforcement.

Gradually add proteins to the resulting mass and mix them into the dough.

Pour the dough onto a baking sheet lined with parchment paper or a silicone mat. Align to get a rectangle.

We put in an oven preheated to 180 degrees for 10-15 minutes. In time, be guided by your oven and check the readiness with a wooden stick, it should not be soggy. But do not overdo it, the cake begins to dry at the edges and breaks when wrapping the roll.

We take the finished cake out of the oven and wrap it in a roll right on the silicone mat. Let it cool.

For the cream, mix curd cheese and soft curd (you can use natural yogurt), add 4-5 sachets of sweetener and vanillin.

We unfold the cake, separate it from the silicone mat.

Lubricate the cake with cream and roll it into a roll. One edge dried out a little, I broke it off, put it on the cream and rolled it up.

Let it soak for 2-3 hours and enjoy.
