Who has a stock of frozen mushrooms?

I have it. I froze mushrooms for the winter, and now summer is on its way, it is necessary to process the mushrooms and make way for a new harvest.

I want to share with you the simplest recipe for mushroom caviar.

✅I needed the following ingredients:

  • boiled mushrooms - 700 g (I had frozen mushrooms),
  • onion - 75 g,
  • large carrots - 130 g,
  • butter - 20 g,
  • garlic 2-3 cloves - 20 g,
  • salt and pepper to taste.

✅Cooking.

I scroll carrots and onions in a meat grinder. I put it in a bowl.

Then I pump mushrooms in a meat grinder.

Chop the garlic finely.

Fry / stew carrots and onions in a pan, without adding oil, adding water. I use a non-stick frying pan, I added 50 ml of water 3-4 times.

Regular readers of my blog already know that we fry onions and carrots - this means that we fry we are without oil in a non-stick frying pan and add a little water at a time, so that we don't have anything burnt.

As soon as the carrots and onions are almost ready, put the mushrooms on them, salt and pepper to taste.

We continue to simmer, adding water so that it does not burn.

Simmer for 15-20 minutes.

Your taste is important here - if you like soft, well-tested mushroom caviar - stew a little longer, try if you like the consistency. If you like to have recognizable pieces, try and determine if you have extinguished enough.

At the very end, add garlic and butter.

Many people add vegetable oil to mushroom caviar. But I like the way the taste of mushrooms plays with butter more.

Mix well, simmer for another 5 minutes and remove from heat.

You're done!
